Need a quick, protein-packed snack or breakfast? Let’s make Lemon Raspberry Cottage Cheese Bowls! Ingredients: 2 cups cottage cheese I used 1%, but the higher the fat content the creamier it will be. 1/2 scoop vanilla protein powder - I used brand. 2 tablespoons monkfruit/allulose blend I used (code RANDA for 10% discount) but you can also use monkfruit/erythritol, maple syrup, or honey. If you like it sweeter, add more. 1 tablespoon lemon juice Splash of vanilla extract 1/8-1/4 teaspoon lemon zest (Start low and add as you go. A fluffy 1/4 teaspoon was perfect for me, a packed 1/4 teaspoon was a little too bitter.) 1/2 cup raspberries I used fresh for blending and topped with frozen Blend it all together and serve into two bowls. You can refrigerate this overnight if you’d like. You can go the extra mile and melt white chocolate chips and pour over for a little extra dessert touch. Don’t be afraid to taste and adjust.
