πŸ’Œ Emergency Freezer Meal Recipes!

Back to school is around the corner for my family, which means adjusting to a new routine and the inevitable cold and flu coming our way like clockwork in the second and third week of September.

​

I like to prep by making soups to freeze for when I'm not feeling 100%, but this year I decided to up it and make emergency freezer meals for when I have low energy and don't want to spend much time in the kitchen.

​

Here is the list of freezer meals I put together for my family, the prep supplies that are a game changer, plus a few tips:

Healthier Freezer Meals

  • ​Red Thai Curry Soup. I made and froze this into prep containers yesterday!
    ​
  • ​Cottage Pie. My husband made this last night and froze in small loaf pans (he did 4 of them). He said he followed this recipe. He adapted by making it GF with brown rice flour and didn't add cheese.
    ​
  • ​Slow Cooker Coconut Curry. I'll take this recipe, and add everything but the broccolini into a freezer bag. Then when I'm ready to cook, I'll transfer it (raw) to a slow cooker and let it do its thing. I may add a little chicken broth as it cooks.

  • Frozen Breakfast Sandwiches. This one is simple, whisk together some eggs and milk (I do 8-10), pour on a small baking pan of 8x8 dish and bake until done. Let cool, cut into squares and make a sandwich with English muffins, cooked bacon or ham, and cheese if desired. Once 100% cooled, wrap in saran wrap, then again in foil, add to a labelled bag and freeze.

  • ​Turkey & Apple Sausage Patties. This can be made with ground turkey or chicken. After they cool, I layer on parchment and freeze in a container. You could also flash freeze and then add it to a zip bag.

  • Chicken Fajitas - No recipe. In a freezable bag, just chicken breast, onions, peppers, and seasoning. Transfer to a slow cooker once ready to cook, add a splash of chicken broth.
    ​
  • ​Marinara Blender Sauce. This is a fast recipe as it is, but I'll double the batch and portion it out into freezer bags, flatten them, and freeze.
    ​
  • ​Korean BBQ Bulgogi Buritos. 40 grams of protein in this one! I'll make it more economical and use ground beef, so the tenderizing part of the recipe will be omitted.

  • ​Chicken and Black Bean Enchiladas. Thriving Home is a fabulous freezer meal resource. They have some incredible cookbooks too!

  • ​Homemade Gluten Free Chicken Nuggets. GF nuggets cost $15-$20 where I live and the amount you get is sad. I found the best recipe was Skinnytaste's. That's it. No need to reinvent the wheel and my daughter LOVES them. Let them cool, flash freeze them, and then freeze them in a resealable bag. I've made this in the air fryer or oven, the air fryer is my favourite!

  • ​Italian Sausage Soup with Rice.
    ​
  • Pulled Pork. Following this recipe, we will cook it all in the slow cooker, shred it, and freeze it in smaller packs for easy pulled pork sandwiches or a random salad bowl on busy days.

  • ​Turkey Taco Skillet with Cauliflower Rice. This will be a simple lunch I can thaw.

We had plans for lasagna (my husband makes the best lasagna) but decided to wait until we make it one evening and double the recipe and freeze the second one. This is a great tip for any of your favorite meals.

Pro Tip:

Chop up onions, carrots, celery and freeze. You can do it separately or together (which is fabulous for soups). This saves me so much time in the kitchen. I use this chopper (affiliate link).

  1. ​These kitchen prep containers. I have both the 16 oz and 32oz - I use 16oz more as it's more single-serve (perfect for soups when you're sick).

  2. ​Meal Prep Labels that dissolve when washed!
    ​
  3. ​Foodsaver and Foodsaver bags (I like to grab the bags from Costco, but the ones I linked from Amazon look good too).
    ​
  4. ​Resealable Bags.
    ​
  5. ​Aluminum Trays and foil. You can look for a variety pack. I like to have 9x13s and loaf pans available.
    ​
  6. ​Parchment paper. I like to put a layer of parchment over casseroles, where air may touch the food to prevent freezer burn. Then I'll wrap in wrap, foil, or both. I do this even with a lid if there is a gap.

I will work on this for a blog post with more recipes I find and try, but I wanted to send this to you ASAP while it's still fresh in my mind.
