5 Recipes to Make Back to School Easier (Plus a GF Sourdough I'm Loving) 🚌


For us, back to school isn't for another few weeks but I've seen many of you sending your kids off this week on social media.

Back to School season brings a sigh of relief for routine, but those first few weeks are usually a cluster and I find I look for easy recipes.

What I'm doing to prep for routine:

  • We're usually sick the second week of September (which never fails) so I'm prepping a few soups to freeze (like this Pot Roast Soup).

  • I'm looking ahead at my weeks to see what I have planned, and am planning dinners accordingly.
    ​
  • In addition to prepping soup, I'm making a few gluten free sourdough discard pizza crusts for my daughter, par cooking them, sealing them in the Foodsaver, and freezing. That way for pizza nights I can just grab them and go.

  • Speaking of gluten free sourdough, I made this gluten free sourdough starter and attempted my first GF sourdough bread this week and it turned out!

5 Quick and Easy Recipes for Back to School Season

Any of these overnight oats recipes make a great grab-and-go breakfast.

​This quick marinara. Blend it together in the blender, heat it up, and serve over pasta and store-bought meatballs.

​Chicken Stuffed Pepper Soup. There are stove top instructions, but you can easily cook the meat first and then pop it in the Instant Pot or slow cooker to set it and forget it.

​Rotisserie Chicken Tacos. Grab a pre-cooked dinner, some tortillas, desired toppings, and dinner is ready.

​Gluten Free Apple Muffins. These are great for throwing in lunch boxes, or as a simple snack for you as you're running between school pick-up and work/errands.
