For us, back to school isn't for another few weeks but I've seen many of you sending your kids off this week on social media.
Back to School season brings a sigh of relief for routine, but those first few weeks are usually a cluster and I find I look for easy recipes.

Any of these overnight oats recipes make a great grab-and-go breakfast.
This quick marinara. Blend it together in the blender, heat it up, and serve over pasta and store-bought meatballs.
Chicken Stuffed Pepper Soup. There are stove top instructions, but you can easily cook the meat first and then pop it in the Instant Pot or slow cooker to set it and forget it.
Rotisserie Chicken Tacos. Grab a pre-cooked dinner, some tortillas, desired toppings, and dinner is ready.
Gluten Free Apple Muffins. These are great for throwing in lunch boxes, or as a simple snack for you as you're running between school pick-up and work/errands.

I hope these help settle the chaos (or at least a bit of the chaos)!

Here is the list of freezer meals I put together...
ALL RECIPES INSTAGRAM SHOP Hey Reader, For the 8-10 months I've been going through a few changes with my body. I don't have the full answers yet, but my doctors and I are working on it. Thyroid hormone levels jumping about (I don't have a thyroid but my numbers have never been so strange), cortisol is all over the place, and body fat showing up and not leaving (thanks a lot). It's been challenging. I know you understand. I'm telling myself it's not happening to me, it's happening for me. I...
